Warm Berry Breakfast Bowl

I eat this breakfast almost every morning. When I’m feeling like living on the edge, I might change up the berries to  banana or even nut butter to nuts (walnuts). I love this breakfast for a few reasons; It’s easy, it’s super healthy and I don’t need to think about what I’m going to eat in the morning. 

This recipe contains all the good things; oatmeal, flaxseeds or chia seeds, berries and my favorite part, nut butter. My preference is peanut butter (I buy the organic 2 pack from Costco) but any nut butter will work. 

You may be asking yourself if I really measure all the ingredients and my simple answer is, Yes! ( Kitchen Scale).  If I don’t measure then I have a tendency to fill my bowl to the tippy top with peanut butter and toss in a berry for looks along with a sprinkle of oatmeal.

This recipe contains all the good things; oatmeal, flaxseeds or chia seeds, berries and my favorite part, nut butter.

Ingredients
  

  • 1 Ounce Oatmeal Old Fashioned or Quick (Both work for this recipe)
  • 6-8 Ounces Frozen Mixed berries ( I prefer organic Kirkland mixed berry blend)
  • 2 Tbsp. Water for frozen berries Or 1/3 Cup for fresh fruit
  • 1 Ounce Nut butter of your choice
  • 1-2 Tsp. Flaxseed
  • Plant Based Milk (Optional)

Instructions
 

  • Place all ingredients in a microwave safe bowl and microwave frozen berries  for 3-4 minutes or fresh berries/ banana for 1 ½ minutes.  Pour plant based milk over the top for an added creamy richness.
