Simple Vegan Cinnamon Rolls with Cream Cheese Frosting

When I made this recipe the first time, my end vision was of gorgeous, gooey cinnamon rolls slathered with a decadent cream cheese frosting sitting delicately in a beautiful Le Creuset pie plate all plump and perfect. Unfortunately, that’s not how it turned out. (The first time)

The rolls were anything but perfect. They were overly gooey, didn’t fit in the beautiful pie plate and I had so much frosting leftover, I could have frosted my entire kitchen. 

My second try at this recipe was WAY better. I moved the cinnamon rolls into two 5″ cast iron skillets. Reduced the frosting recipe size from enormous to just right and the end result was pure cinnamon roll perfection. The cast iron skillets are a perfect vessel to hold all the bubbly goodness and the frosting is seriously over the top. It’s not overly sweet and it’s the perfect topping for the perfect cinnamon roll.

Simple Vegan Cinnamon Rolls with Cream Cheese Frosting

These rolls are easy to make and are pure cinnamon roll perfection. The cast iron skillets are a perfect vessel to hold all the bubbly goodness and the frosting is seriously over the top. It’s not overly sweet and is the perfect topping for the perfect cinnamon roll.

Equipment

  • Hand mixer or stand mixer
  • Rolling Pin
  • Measuring cups
  • Measuring spoons
  • pastry brush

Ingredients
  

  • 3 Tbsp. Vegan cream cheese plain (I used simple truth organic)
  • 1 Box Puff Pastry Sheets (I used Pepperidge Farms)
  • 1/4 Cup Brown Sugar
  • 2 Tsp. Cinnamon
  • 1/8 Tsp. Salt
  • 2 Tbsp Vegan Butter/Separated (you will need 1 Tbsp. for frosting and 1 Tbsp. for the rolls) (I used Earth Balance Original)
  • 1/4 Tsp. Vanilla
  • 1 Cup Powdered Sugar
  • 2 Tsp. Almond Milk

Instructions
 

  • Preheat oven to 375
  • Take out the puff pastry, butter and cream cheese. Place to the side while you make the cinnamon filling.
  • Lightly flour your work surface
  • Roll out the puff pastry so it measures approx. 12×12
  • Mix together the brown sugar, cinnamon and salt.
  • Melt 1 Tbsp of butter and brush over the puff pastry
  • Sprinkle the brown sugar mixture over the puff pastry leaving approx 1" border.
  • Starting at the edge closest to you, begin rolling the dough.
  • Cut the end off the dough. Slice the dough into approx. 1 " slices and place in the cast iron skillets.
  • Cook for 20 minutes
  • To make the cream cheese frosting
  • In a bowl mix together cream cheese, vanilla, powdered sugar, butter (not melted), and plant based milk.
  • Using a hand or stand mixer, mix all ingredients until they are soft and creamy.
  • Allow rolls to cool for 4-5 minutes before frosting
