Easy Chocolate Truffles
These chocolate truffles are AMAZING and you only need 3 ingredients! Who doesn’t love that! I ended up eating all the broken cookies so if you’re anything like me, you may want to buy the bigger box!
Ingredients I used to make the truffles
1 (14 ounce) package Oreo cookies, divided
1 (6 ounce) container of vegan cream cheese
1 (9 ounce) vegan chocolate chips
How To Make Chocolate Truffles
To make this recipe, crush 6 cookies into crumbs using a food processor or place cookies in a plastic bag and crush with a rolling pin. Place remaining 28 cookies into the food processor (or bag) and crush until cookies are a fine crumb. Add the cream cheese to the food processor and pulse until it’s incorporated.
Chocolate crumbs you will need at the end.
Transfer into a bowl, mix using a spatula until all ingredients are fully mixed together. The mix will be a little soft at this point, don’t worry it all comes together in the end.
Place the bowl in the refrigerator for 10-15 minutes.
Once time is up, roll balls into a 1-inch diameter. If you want more uniform truffles feel free to use a cookie scoop. Roll into a ball and place on a cookie sheet lined with waxed paper.
The chocolate truffles should look something like this once rolled.
Refrigerate for another 10-minutes
Melt chocolate in the microwave for 1-minute. Stir and microwave in 30 second increments until all the chocolate is melted.
Dip the cookie balls in the melted chocolate mixture making sure they are completely coated.
Place on a cookie sheet sprinkle with the extra crushed cookies and any extra chocolate chips.
Refrigerate for 1-hour.
Store extra in the refrigerator covered.
